I've always slacked a little in the cooking department. Ben has made it easy on me since he loves to cook & takes over a lot while I run dish duty. Lately I've been cooking a lot more and we've had a full week of delicious meals. (Wife of the year over here, I know.) Anyway, I feel like the hardest part of dinner is deciding what to make! So I've put together a meal plan to follow based on what I've been cooking!
These meals usually always allow us to have enough left overs for Ben to take to work.

Sunday: Meatloaf, Green Beans, & Mashed Potatoes
It's great, I swear! Don't let the name get to you.
Monday: Chicken with Creamy Cilantro Lime Sauce & Asparagus
Wednesday: Mississippi Roast, Green Beans & Leftover Potatoes from Tuesday
Thursday: Chicken with Creamy Mushroom Sauce over Pasta
How I Made It: I cut up the chicken and cooked it in the pan. Then I added butter and the mushrooms. I whisked in the flour, 1 cup heavy cream, 1/2 cup chicken broth, parsley, basil, red pepper flakes & about 1/4 cup Parmesan cheese (maybe more or less, I didn't measure). Then I added salt & pepper. This was my favorite of the week!
Friday: Maple Mustard Pork Tenderloin & Peas
Saturday: We ate out. You deserve it!
Our oven isn't working so I made all of these on the stove top. Basically just followed the directions as best I could while doing everything on the stove. I honestly think it's a bit easier to do it that way!
And if you're wondering, no, I didn't turn into a professional food photographer.

I most definitely plan on sharing more meals in the future. I think creating a menu really helps motivate me in the kitchen!
